This dry Junmai Ginjo uses white malted rice in the brewing process where the citric acidity produced during the alcoholic fermentation process gives it a sour taste. Although it is made from both rice and white malted rice, it has a very smooth taste that goes down the throat without a hint of sweetness, making it a bottle that will satisfy even the most discerning wine lover. Pairing with French and Italian cuisine with seafood as an ingredient is recommended.
